I keep telling my clients that they should just write normally, then when done,
go back and replace "it" with their keyword, but only in a few places.

But they keep asking me how much keyword stuffing can they do?

I think its considered unethical SEO techniques because it happens when meta keywords are repeatedly used. Its a kind of hiding a text from visitors. This method is outdated and there can't be any effect in rankings.
